We had baked haddock with fries and cole slaw.
For dinner on Wednesday, I roasted sweet potato chunks tossed in olive oil, which we had with leftover roasted chicken thighs and microwaved fresh broccoli.
Our dinner on Thursday was ham sandwiches on the Rye Semolina Rolls. We also had a salad.
We had salads with tuna fish, tomatoes, and olives, and a slice of apple pie.
I had hot dogs with cottage cheese and peaches.
Dinner Thursday night was egg salad sandwiches and olives.
I made Salmon and Couscous for dinner on Friday, which we had with microwaved frozen peas.
We had salads again tonight.
I found a recipe on youtube for one pot, 3 ingredient, mac and cheese. You cook the mac in milk and then add the cheese and that's it. (it's 2 - 3 cups of milk, 8 ounces of mac and one cup of shredded cheese). I made a half recipe. It came out pretty good but was a little thick, next time I'll use more milk. I had it with a pork loin sandwich and brussels sprouts and carrots.
Rotisserie chicken and potato salad.
We ate liver and onions, with pan fries and cole slaw.
I made yogurt on Saturday.
I cut up the rest of the ham and froze most of it, as well as the bone. I had planned a Potato, Spinach, and Ham tart for dinner, as I was able to score both fresh spinach and green onion at this morning's farmers market, but I did not have time to make it because we had the chance to Skype with the grandson for the family celebration of his first birthday in the late afternoon. So, we shifted to ham sandwiches and salads for dinner.
We grilled ribs and potatoes for dinner, and had a green salad also.
We had onion soup for supper, but instead of parmesan crisps I took some parmesan cheese and made my own crisps.
