INSTRUCTIONS
Tryon Palace, in New Bern, NC, was the British Governor's residence before the American Revolution, when North Carolina was still under British rule. The palace is restored, and is a treasure. This recipe came from 'The Best of the Best From North Carolina' (1990).
2/3 C Wesson (or canola) oil
1 C sugar
1 egg
4 T molasses
2 C sifted flour
2 t baking soda
1/2 t salt
1 t cinnamon
1 t ginger
1/4 C sugar for dipping
Preheat oven to 350º F. Mix oil and sugar thoroughly. Add egg and beat well. Stir in the molasses. Sift dry ingredients together and add. Form into 1 tsp-sized balls and roll in sugar. Place 3 in. apart on ungreased cookie sheet. Bake 15 min. Cookies will flatten and crinkle. Remove to wire rack.
