      DESCRIPTION
      sweet relish

      SUMMARY

      INSTRUCTIONS
      Grind together with coarse blade
      6 red bell pepper
      1 quart cauliflower
      4 or 5 large onions
      1 quart cukes (any kind)

      Sprinkle all with 5 Tablespoon salt and let stand for 2 hours. Drain. Mix 1/8th teaspoon alum with boiling water and our over mixture. Let stand for a few minutes then drain again.

      In a large pot put;
      1 quart white vinegar
      4 cups sugar
      4 Tablespoon mustard seed
      2 Tablespoons celery seed
      1 teaspoon turmeric

      heat until dissolved and add mixture. Cook until tender. Put into hot jars and seal with hot lids.

      As you can see its an old recipe. I put mixture into the brine, stir well, bring up to heat then into hot jars with hot lids and process in a boiling water bath for about ten to fifteen minutes. I use an old enamel dishpan to grind it into and make a huge amount at a time. I have actually seen people have a little taste then start to eat the stuff straight out of the jar. I also make a calico one with orange and yellow peppers. Its pretty in the jar and the taste is to die for. One warning. The turmeric stains whatever it touches.
