Strawberry Rhubarb Surprise Pie
1 cup flour
1 tsp. baking powder
1/2 tsp salt
2 Tbsp. butter
1 egg, beaten
2 Tbsp. milk
Whisk together the flour, bkg. powder and salt. Cut in butter. Add egg and milk. Mix. Press into 9" pie plate.
3 cups diced rhubarb
1 (3 oz) pkg strawberry Jello (dry)
1/2 cup flour
1 cup sugar
1/2 tsp. cinnamon
1/4 cup melted butter
Arrange rhubarb in shell. Sprinkle with dry Jello. Combine remaining ingredients and sprinkle onto pie.
Bake at 350 degrees for about 50 min. or until tender.
