Rhubarb Pudding
3 cups cut up rhubarb
1 cup sugar
1 egg
1 cup sugar
1 cup flour
1 tsp. baking powder
1/2 cup shortening
Cut rhubarb into 13 x 9 inch pan. Sprinkle with 1 cup sugar & dot with butter or oleo. Mix together egg, sugar, flour, baking powder & shortening. Pour over rhubarb and cover with 2 cups mini marshmallows. Bake at 350F degrees for 30 minutes. Serve with ice cream or plain.
