INSTRUCTIONS
These are supposed to be like the muffins they used to serve at Jordan Marsh stores that are no longer in FL, got out of the paper years ago.
Original Jordan Marsh Blueberry Muffins
2 c AP flour
2 tsp baking powder
1/2 tsp salt
1/2 c butter, at room temp
1-1/4 c sugar, plus 2 TB
1 tsp pure vanilla
2 large eggs
1/2 c milk
2-1/2 fresh blueberries
Preheat oven to 375. Line 18 muffin cups with paper cups or grease well.
In large bowl, wisk together the flour, baking powder and salt. Transfer to piece of wax paper. In the same bowl, cream the butter and 1-1/4 c sugar until light. Add eggs, one at a time, beat well after each. Stir the vanilla into the milk and add alterntely with flour mixture to the cream mixture.
Mash 1/2 c blueberries with fork and mix into batter. Fold in the remaining berries. Divide the batter among 18 cup muffin pan. Sprinkle each with a portion of remaining 2 TB sugar.
Bake about 25 minutes. Cool for 5.
