Nancy's Summer Spaghetti
I am submitting this recipe as it was given to me. However, I think that this would be wonderful if it was completely assembled and then marinated together and served cold, topping with parmesan cheese just before serving.
6 Tomatoes, Peeled and Chopped
3 Cloves Garlic, Peeled and Minced
1/2 Cup Fresh Basil, Chopped
3/4 Cup Olive Oil
1 lb Mozzarella Cheese, Cubed or Grated
1 lb Dry Spaghetti Noodles, Dry
Grated Parmesan Cheese
Mix tomatoes, garlic, basil, olive oil and mozzerella cheese together in a plastic bowl. Cover and marinate for 6 hours or overnight. Just before it is time to eat, cook spaghetti according to the package directions, drain. Toss with marinated tomatoes, salt and pepper to taste and parmesan cheese.
