Kairen's Special Banana Bread
1/3 C Sour Cream
1 1/2 tsp. Baking Soda
2 C Over-Ripe Bananas, Mashed
3 Whole Eggs
1 1/2 tsp Vanilla
3/4 C Margerine, Melted
3/4 tsp Salt
1 2/3 C Sugar
2 1/4 C Flour
1/2 C Walnuts, Chopped
Preheat oven to 325 degrees. Grease loaf pan.
In a small bowl, combine sour cream and baking soda, set aside. This is an important step, do not bypass.
In a separate bowl, combine eggs, vanilla, melted margerine, salt sugar, flour and mashed bananas. Fold in sour cream mixture, stirring completely, but only until combined. Add walnuts, if desired. Pour into a 5 1/2 x 8 1/2 loaf pan. Bake at 325 degrees for 1 hour and 20 minutes or until firm to touch.
Remove from oven and allow to rest in pan for at least 15 minutes before removing.
