        I got it!! This technique is very popular. I read about it a lot but only tried it once.

          My husband's cousin introduced me to the technique when she used it at a family gathering. I have never used it.

            That's my favorite way of cooking a whole chicken. I always worry about the cavity being properly cooked, spatchcocking eliminates that problem.
