Look at this. I thought they were making climate resistant wheat, but no they are trying to see if the climate resistant wheat mixtures make good bread. The theory behind the wheat planted has been around awhile. Plant different varieties of grain in a field and some of it will survive for a good harvest. Now they are testing to see if a good whole wheat bread willl be produced

I've been tempted to try King Arthur's Regenerative Flour, but it is pricy.

The Regenerative Flour is associated with the Bread lab mentioned in the article but its 2 1/2 times the price of regular whole wheat flour.
I wonder thow they get the various strains of wheat to be ready for harvest at the same time.
