MUFFINS: Applesauce Muffins
2 cups whole wheat pastry flour
1 1/2 cups oat bran
1 Tbsp. baking soda
1 Tbsp. baking powder
3 Tbsp. buttermilk powder
2 tsp. cinnamon or pumpkin pie spice
1 cup raisins
2 egg whites (or 1 whole egg)
2 tsp. vanilla
4 tbsp. honey
1 Tbsp. oil
2 1/2 cups unsweetened applesauce (25 oz. jar)
3/4 cup water
Mix first 7 ingredients together. Mix the rest of the ingredients together in a separate container. Add the wet ingredients to the dry and mix until moistened.
Put in 12 large muffin tins or 24 regular ones.
Bake 400 degrees for 25 minutes.
