Happy Easter! I'm making a 3.5 lb boneless leg of lamb that I had in the freezer from Omaha Steaks. It was supposed to be gor me, my husband and dog for this Easter but, sadly, it's just me and my dog, Shorty. I'm making bearnaise sauce and a cheese stuffed potato and carrots. There will be alot left over so I guess I'll be freezing it for shepherd's pie and stew. I don't really like leftover lamb so if anyone has any suggestions let me know!
