      Happy Easter! I'm making a 3.5 lb boneless leg of lamb that I had in the freezer from Omaha Steaks. It was supposed to be for me, my husband and dog for this Easter but, sadly, it's just me and my dog, Shorty. I'm making bearnaise sauce and a cheese stuffed potato and carrots. There will be alot left over so I guess I'll be freezing it for shepherd's pie and stew. I don't really like leftover lamb so if anyone has any suggestions let me know!

        My wife doesn't like lamb, so we're doing smoked pork chops for supper.

          We had an unconventional Easter dinner of roast chicken, Pepperidge Farm Dressing (Blue Bag, of course), and microwaved fresh broccoli, applesauce from the freezer, with more apple cake for dessert, as well as an Easter Egg York peppermint patty.

          Oh, and the UCLA women won the basketball championship! This Bruin is quite happy about that.

            Happy Easter. We didn't do anything Easter-y today. I'm still in recovery mode and not eating much. Will made me rice, fresh green beans in chicken bone broth which he flavored nicely with a roux. It tasted really good and Will was proud of me for eating it all. Then we split a brownie from the freezer with. Small scoop of Irish crème chocolate coffee icecream

              Glad to hear that Will is taking such good care of you, CWCdesign.

              Monday night's dinner was leftover roast chicken and dressing, more of the applesauce, and a very nice green salad.

                Cwcdesign happy to hear you're doing well and you're so blessed to have Will with you!

                I had a grilled cheese and yogurt with celery sticks and ranch. Trying to clean out the fridge I'll be going to Texas Thursday morning and will be gone 9th-14th.can't wait to get my hands on the great grandbaby!

                I've been super busy and had a big Easter with friends and family,I haven't been posting much but I've read each of your posts and Len your pizza with eggplants sounds wonderful!

                  We had our pork chops tonight rather than on Easter, and I still haven't made deviled eggs from the eggs I hard-boiled on Saturday. A long-postponed system upgrade got in the way.

                    The pot cheese, noodles, sour cream and bacon (turos csusza) was very delicious and filling.

                      Joan--Have a wonderful trip and enjoy that sweet little great-granddaughter!

                      I made yogurt on Tuesday. I also made apple filling for Butterscotch Apple Sweet Rolls, which I plan to bake in a few days. I used eight small Winesap apples. My apples have kept well in the garage, where we keep the temperature in the upper 30s to low 40s, but I need to use them up. I usually make the filling with Rubenette apples, but those were only available briefly in the fall, and I am not sure that vendor will continue having them, so I want to see if the Winesaps will work in their place.

                        I had over easy eggs on top of fried toast, trying to use up stuff in refrigerator.

                          On Wednesday, I made Caramelized Squash and Lentil Soup, using Daniela Galarza's recipe that I first tried about a month ago. I used a butternut squash, the last of my winter squash hoard. I had some for lunch and will have the rest at lunch during the rest of the week.

                          For dinner, I made Chicken salad to have on the buns I baked today.

                              Yesterday, I made eggplant parm and had it with a hamburger.

                              A few days ago, I pulled a pork roast from the freezer that's been in there for about a year and a half. I roasted it today, it was fine. I had a pork roast sandwich, cauliflower and some leftover eggplant parm.

                              I have a lot of stuff in the freezer that I need to start rotating out.

                                Len, I sometimes think that I should keep a list of what is in the freezer so that I do a better job of rotating items.

                                Tonight, we had chicken salad sandwiches again, with spinach on the buns I baked yesterday. I had some baby raw carrots as well.

                                  On Friday afternoon, I made another batch of the filling for Butterscotch Apple Sweet Rolls and froze it.

                                  For dinner, I made Crispy Oven Fish and Chips with Dill Tartar Sauce, which we had with fresh microwaved broccoli.
