We stayed in the 30s today, but the sun was strong.
On Sunday, I roasted the large Fairy Tale pumpkin that I bought last October at Kroger. I was able to fit the two large halves (I cut it vertically) into my large Calphalon Roaster. With this kind of pumpkin, a high-sided pan is a necessity because the pumpkin releases a fair amount of water. After I scooped the cooked pumpkin out, I divided it among two colanders set over bowls and allowed more water to drain before I pureed the pumpkin in my food processor. I divided it up into containers and found a way to stash it in the freezer. I started this project in the late morning, so that I could use the oven to take advantage of the power the solar panels were generating.
Dinner tonight was the remainder of the pork loin roast with butternut squash, barley, and kale.
March 2, 2026 at 2:48 pm #48631I roasted a small pork tenderloin on Sunday, had it with roasted potato, sugar snap peas and cauliflower.
March 2, 2026 at 4:56 pm #48632I did steamed fish on Sunday with stir fryed brocolli. I was planning on cooking it Friday evening but the fish started out frozen and wasn't thawed till yesterday. Not bad but I might have overcooked it slightly. It was cooking with ginger and sesame oil with a little soy sauce.
March 2, 2026 at 6:16 pm #48633Sunday March 1st was my 71st birthday thankful for everyday! I went to my friends and they had a spread of tacos and all the fixings, cheesecake for dessert and we had a great day of riding golf cart looking at armadillos and gophers , playing a new card game and just having fun .
Tonight I had creamy ranch chicken shredded up and on a flour tortilla.

For Monday's dinner, I roasted a bone-in chicken breast. I roasted sweet potato chunks separately in my countertop oven, as they require a lower temperature. Microwaved frozen peas completed the meal.!

Yesterday, I made a kale pasta Caesar salad from NYT. I added baked chicken tenders. For all the great reviews, I was disappointed. I halved the amount of pasta and it came out dry. And I thought the dressing didn't have much flavor except for garlic - I have better creamy ones that I've collected over the years. I actually bought a bottle of oil based Caesar dressing that I like to add some moisture to it - it helped.

March 3, 2026 at 7:16 am #48641Happy Birthday Joan🎂! Yesterday my husband and I had fish and chips at a great little seafood place in Dunedin. This was after a spring training baseball game game where we almost melted in the sun.
March 3, 2026 at 7:25 pm #48646For dinner on Tuesday, I used the leftover chicken breast meat to make chicken salad to have on sandwiches made with rolls I baked today. I found some frozen dill in our freezer left over from the summer when we were making pickles, so I used that rather than dried dill.
