I'm processing tomatoes for the freezer today also; my first session of this season.
Its been too hot the last couple of weeks to do any baking and my cooking has been minimal. I've been subsiding mainly on grilled tomato and cheese sandwiches, sometimes with luncheon meat and/or onions added. I did manage to cook stir fry pork and vegetables, and stir fry chicken and vegetables and once a pork chop with apples.
My plan for this week is hamburgers and more hamburgers. I plan to give blood or try to on Wednesday and I want to boost my iron.
I think we're doing tuna melts for supper and I have a big batch of tomato sauce going, about 25 pounds of tomatoes.
We had the other two ears of sweet corn and large salads with roast turkey pieces on top for dinner, same as last night.
I bought a rotisserie chicken and made a sandwich on pita. Also made tahini sauce for it.
Pizza for supper tonight.
I think I'm getting the hang of this dough (Neapolitan) and pizza (Margherita.)
Great pizza, Mike!
We had leftover turkey, vegetables, and pasta for dinner on Monday.
Good looking pizza Mike!
Tonight I have stewed squash with onions, steak bites and sliced tomatoes.
That pizza looks delicious.
Yesterday I made hamburgers and mashed potatoes. Yesterday I had a burger and mashed with broccoli. Today I had the same but with green beans.
We had sweet corn and then cold cuts/sandwiches.
We had more turkey and noodles.
For some reason, I'm craving pizza. I can't imagine why. 🙂
I made chicken vegetable soup on Wednesday using chicken broth, carrots, celery, purple and orange bell peppers, zucchini, and the last of the green beans from our garden. I added a can of dark kidney beans and a can of chopped tomatoes. I added some dried onion and parsley and some freshly ground black pepper. I added some pasta in the shape of pumpkins and leaves. It is somewhat bland, but by leaving out the regular onion and basil, my husband will be able to eat it. I had it for dinner while Scott finished the turkey and noodles.
I made shrimp avocado salad with tomato, red onion and drizzled with ranch dressing and dusting of chili powder. I sautéed the shrimp in olive oil, a little butter and about a teaspoon of jarred garlic. It is delicious and so refreshing. I used a small avocado for each bowl.Dang good!
