Yeah, that's a bit pricey, but King Arthur flours have never been the cheapest alternatives, especially their specialty flours.

The perennial wheat breeding project is interesting, but I think they've got a lot more work to do.

A local farmer from Colombia is producing regeneratively grown flint corn to make his arepas for a couple of years now. Currently, he sells his arepas from a food truck and is partnered with a market farm about a mile down the road from my house.
