Tonight I had a Healthy Choice chicken dinner.
I'm having a roast beef sandwich and a salad, Diane is having mushroom soup.
We finished up the pork tenderloin, mashed potatoes, and coleslaw on Wednesday.
I made my farro salad tonight with apples, pecans and I substituted salad greens for the arugula and Asiago for the shaved parmesan as I had those on hand. The dressing is made from olive oil flavored with shallots - they get crisped in the oil and then added to the salad as well. There is also honey, cider vinegar and Dijon in the dressing. Nice and filling and I'll have it for a few more days.
I had a meatball with spaghetti, green beans and carrots.
I made my healthier version of my mom's Hamburger Stroganoff for dinner on Thursday, which we had over a mixture of 2/3 long grain brown rice to 1/3 wild rice mix. It's a comfort food for a chilly, normal Midwestern spring day. We had microwaved fresh broccoli with it.
I had a hotdog with coleslaw.
We're having a pizza for supper.
We had more of the hamburger stroganoff, but we had microwaved frozen mixed vegetables with it.
I had roasted pork tenderloin, small roasted potatoes and brussels sprouts.
We are finishing the hamburger stroganoff tonight with microwaved broccoli as the vegetable.
We had tomato soup and fried cheese sandwiches on the honey wheat bread I baked last night.
I made a macaroni salad with onions, peppers, celery and peas and had with it marinated cucumbers and a ham steak.
