We had ground beef stroganoff on cauliflower rice, tasty and only about 15 carbs/serving.
We're having tacos tonight (or taco salad without a taco shell.)
On Thursday I ground up a couple pounds of pork loin chops and made meatballs for the freezer.
Thursday and Friday, I made pizza.
On Saturday, I made black-eyed peas with brown and wild rice, yellow bell pepper, celery, dried onion, thyme, and chunks of ham from the freezer. We have enough leftovers to alternate with other meals during the coming week.
I also made yogurt.
I had a sausage dog with sauerkraut.
Tonight I had meatballs (one chicken and one pork), garlic mashed potato and brussels sprouts.
Saturday night we had ham steak, broccoli salad, and the last of the Mediterranean salad and cole slaw.
