Lazy day for me, rainy and cold staying in my pajamas all day and watching movies. I don't do this often today. It was a hot dog day.

On Wednesday, I roasted three large bone-in chicken breasts, which I seasoned with Penzey's Justice blend. I also made muddled mashed potatoes after steaming the potatoes and mixed in a bit of salt and some evaporated milk. I pulled out a small container of turkey gravy that I froze at the end of January. We also had microwaved frozen peas.
With the baking that I did earlier, I was in the kitchen for about 7 hours today. However, that will set me up to spend less time in the kitchen and more on some other projects for the rest of the week.

February 20, 2025 at 5:54 pm #45638We finished the last slice of spaghetti squash casserole and had more of the black-eyed peas with brown rice and ham for dinner on Thursday. Enough of the latter remains for me to have for lunch tomorrow. It was a good night for leftovers, as my husband had his check-up with the oral surgeon in Fort Wayne today, which is an hour and 45 minutes each way. I'm thankful that Scott has healed well and there is no recurrence of the oral cancer.

Tonight I'm going to make a stir fry with the leftover chicken and celery, carrots, broccoli and green pepper. Will have it with rice.

I made a simple kale Caesar salad tonight. I like that it lasts for a couple of days and the kale gets more tender over time. I think I'll bring home some salmon from work tomorrow night to go with it.

Dinner tonight was leftover roasted chicken breasts and mashed potatoes and gravy. We added microwaved fresh broccoli as the vegetable.

February 22, 2025 at 9:07 am #45651We are getting a new refrigerator so I have to empty the old one and find some place to put all my frozen food! Anyway I roasted a pork tenderloin with orange sauce to use up the frozen orange juice concentrate. I don't think I'll be replacing the frozen orange juice!
February 22, 2025 at 9:58 am #45654Our newest refrigerator (in the basement) has a mode switch to go between refrigerator and freezer mode, very handy for defrosting a freezer, you just move everything over for 2 days.
February 22, 2025 at 6:47 pm #45656For Saturday night dinner, I made chicken and noodles with the leftover chicken breast, which my husband cut up for me, sliced carrots and celery, mushrooms, the rest of the gravy, and about 1 ½ cups of frozen broth. It already had seasoning from the broth, from the gravy, and from the chicken, so I just added dried parsley and freshly ground pepper. We have enough for a second meal.
