      INSTRUCTIONS
      Sannis pattycakes

      This is based on maida heatters madeleines, i invented them when the madeilenes came out too dry one day, they look fancy and taste heavenly.

      2 lg. Egg yolks + 1 egg
      1/ 4 c sugar
      ½ c sifted cake flour
      2 oz. Melted butter
      1 tsp. Vanilla ( i use bourbon vanilla)

      grease a patty cake tin (oyster tin) with 12 indentations. Heat oven to 375° degrees, rack one third up from oven bottom.

      Beat yolks, egg and sugar for 15 minutes ( that’s right, that long). Fold in flour and vanilla, then liquid butter, scrape bottom of bowl to make sure all the butter is incorporated.
      Spoon into pan, bake about 18 minutes until golden. Turn immediately onto racks to cool.

      When cold spread each cake (on the flat side) with 1-1/2 tsp. Raspberry or mixed berry jam. Place on racks with rounded side down.
      Melt together 8 oz. Semisweet chocolate and a tbsp. Walnut oil (on low heat!). spread about 2 tsp. Of the chocolate on the jam covered side ( i just let the chocolate fall from the spoon, it spreads itself over the jam).
      Let chocolate become firm. Keeps well for about 3 days.
