I promised this recipe a while back, better later than never. I’ve also used lime instead of lemon, and rosmary in place of the basil
Lemon Basil Cookies from BLJ
3/4 cup butter
3/4 cup sugar
1 T. grated lemon rind
1 T fresh lemon juice
1/3 cup minced fresh basil
2 cups AP flour
1/2 t. baking soda
1/4 t. salt
1/3 finely chopped pistacios
3 T sugar
Beat butter until fluffy, add the sugar beat well
Add egg, rind, juice and basil. beat until blended.
Mix together dry ingredients and add to butter mixture beating until blended.
Cover and chill one hour
Shape into small balls and roll in 3 T sugar with the chopped nuts in it.
Bake at 350 for 10-12 minutes or until light brown. Cool. Yum.
