      SUMMARY

      INSTRUCTIONS
      Cooks illustrated white bread

      This is my favorite plain bread if I don’t have time for sourdough…well, except moomies, of course!

      3-1/2 cups bread flour
      1 pckg. Yeast
      2 tsp. salt
      2 tbsp. sugar or honey ( ci version: 3 tbsp.)
      1 tbsp. butter ( ci version: 2 tbsp.)
      1 cup milk & 1/3 cup water, warmed

      mix everything together with a mixer, knead about 6 minutes. Let rise in warm place for 1 hr. , turn dough onto work surface and knead together, avoid adding too much flour during kneading. Shape into loaf: press out dough into a rectangle about the length of the pan and fold like a letter, place in 9x5 pan and let rise for 45 min.
      bake in preheated 350° oven on low rack for 40-50 min. cool one minute in pan and turn out onto racks.

      Notes: ci suggests to use rapid rise yeast, I usually use fresh yeast and increase the rising times a bit. I also shortened the instructions, but if you know a bit about breadmaking this is fine. Following are my fav variations:

      - Sunflower-spelt-honey:
      Use honey as sweetener, use ½ bread and ½ spelt flour, add about ¾ cup sunflower seeds.

      - flaxseed:
      use honey as sweetener, use ½ bread and ½ whole wheat flour, add about ½ c crushed flaxseed

      - oatmeal:
      bring ¾ c water to a boil, add ¾ cup rolled oats, cook about 90 seconds. Decrease flour in recipe to 2-3/4 cups and omit the 1/3 water, add oatmeal to ingredients in bowl. I like to molasses or brown sugar in the oatmeal bread.
