      Chicken sealed in silver

      2 tsp. Fresh ginger root, minced
      4 garlic cloves, minced
      ¼ cup mango chutney
      2 tsp. Cider vinegar
      4 tsp. Melted butter
      ¼ tsp. Crushed hot red pepper flakes

      1 cup thinly sliced leeks

      4 boneless, skinless chicken breast halves
      1 tsp. Salt, or more to taste
      1 to 2 teaspoons freshly ground black pepper
      1 red bell pepper, seeded and slivered
      16 snow peas, slivered

      Preheat oven to 500 degrees. Cut four sheets of foil each 1 foot square. Stir together ginger, garlic, mango, chutney, vinegar, butter, and red pepper flakes. Divide the leeks equally, placing one portion in the center of each piece of foil.

      Season both sides of chicken with salt and pepper to taste, and place on top of leeks. Spread ¼ of the chutney mixture on each chicken breast. Sprinkle with the slivered peppers and snow peas and season with salt and pepper.

      Preheat a baking sheet in the preheated oven for 2 minutes. For each serving, lift corners of foil to form a triangular pouch. Double fold each open edge to enclose chicken.

      Set pouches on the preheated sheet and bake 15 minutes; remove from oven and let pouches stand on baking sheet without opening for 5 minutes. Place each pouch on a warm dinner plate and let the guests open their own.
