PIES: Blueberry Pie using frozen blueberries
Crust
One 9-inch unbaked pie crust
Brush bottom of pie crust with:
1 egg white beaten w/1 tsp. water
Filling
4 cups frozen blueberries
2/3 cup sugar
1/4 tsp cinnamon
3 Tbsp cornstarch
1/8 tsp salt
Combine in saucepan and cook until mixture thickens and boils. Take off heat.
Stir in:
1 1/2 Tbsp butter
1 tsp lemon juice
Stir in:
3 cups frozen blueberries
Streusel crumb topping
1 cup all-purpose flour
1/4 cup granulated sugar
1/4 cup packed light brown sugar
1/4 tsp cinnamon
1/4 tsp baking powder
1/8 tsp salt
1/3 cup unsalted butter, melted and cooled
Bake pie at 400 degrees for 40 minutes.
