      INSTRUCTIONS

      2 x Packs of filo pastry
      250 grams Melted butter
      200 grams Walnuts, chopped
      200 grams Plain butter
      150 grams Biscuits, crushed
      800 grams Sugar
      1 tbsp Cinnamon
      2 tbsp Lemon juice

      1. Brush the base of a shallow 30x20 cm tin with a bit of the melted butter.
      2. Place 2 sheets of pastry in the base of the tin.
      3. Mix biscuits and walnuts together in equal proportions.
      4. Sprinkle a bit over the pastry.
      5. Repeat this arrangement until the filo pastry leaves are finished. The top layer should be 3 - 4 sheets at once.
      6. With a sharp knife, cut the baklava carefully into squares and pour the hot butter over it.
      7. Bake for approximately 1 hour or until golden brown and crisp.
      8. Allow to cool.
      9. Meanwhile make the syrup: In a deep pan place the sugar with 1 litre of water.
      10. Add cinnamon and lemon juice and stir over a lot of heat until the sugar is dissolved.
      11. Pour the hot syrup over the completely cooled baklava and leave it to ''rest'' for a day.
      12. Serve with a glass of cold water!
