      Anything over 2.42 ounces is a jumbo, that'd be a super-jumbo! (Large eggs should average about 2 ounces in the shell.) I remember getting some banty eggs from UNL, they were under 1.5 ounces each. The instructor said new laying hens took 2-3 months to start laying eggs that qualified as large.

          Supper tonight was chicken salad on croissants (from Sams), using some of the leftover rotisserie chicken from yesterday.

          Recipe:

          1 chicken breast, diced
          1 rib of celery, diced
          1 kohlrabi, diced
          24 red grapes, quartered
          1/2 teaspoon mustard
          4 prunes, diced
          1/2 cup miracle whip (more or less)
          salt and pepper

          We tried both margarine and cream cheese on the croissant, both were good, I preferred the margarine, Diane preferred the cream cheese. (They help the chicken salad stick to the croissant, too.)

            I got 11 tomato cages (out of 24) planted this morning, hope to get the rest this evening after it cools down again. Still have eggplants to go in, haven't decided where yet, plus a dill patch.

            I'm never sure if it's the squirrels, rabbits, possums, foxes or raccoons that eat my tomatoes, I think some of the birds poke holes in them, too, looking for bugs? I'm pretty sure it was a rabbit nibbling on my dill last year. I've seen squirrels carrying off tomatoes in their mouth, sometime almost bigger than their head.

              Ah, such beautiful buns! I need to bake that recipe again soon.

              I needed to use two of my last Cara Cara oranges, and we also were out of cookies on Wednesday. I had the inspiration to make orange pecan biscotti with mini-chocolate chips. I had adapted a recipe from Fine Cooking (Issue 61) for "Triple Orange Biscotti a year or two ago, so I looked at it and at a Bon Appetit recipe for Chocolate-Orange Biscotti that uses butter, and I looked at my Lime Pecan Biscotti recipe for ratios. I ended up using the recipe I had adapted from Fine Cooking, but I used all white whole wheat flour, which I increased from 2 2/3 to 3 cups and added 3 Tbs. Bob's Red Mill milk powder. That let me use 1/3 cup orange juice (rather than 3 Tbs) so that none would be left over. I slightly increased the olive oil from 5 Tbs. to 1/3 cup. Along with the pecans, I added ½ cup of mini-chocolate chips. I baked it as three 14-inch, long thin logs, which spread slightly, at 350 for 25 minutes, then cooled for 25 minutes before slicing and putting the standing slices back into the oven for 15 minutes at 325 F. Scott and I both sampled a tiny slice tonight, and we agreed that this version is a keeper. They will go well with either tea or coffee.

                To go with leftover Turkey-Zucchini Loaf on Wednesday, I made a farro stir fry with turkey broth from the freezer for cooking the farro and used olive oil to saute chopped carrots, celery, an orange bell pepper, sliced green onion, and a pound of sliced mushrooms. I do not usually use so many mushrooms, but our local store only has the older mushrooms out on the morning that we do our shopping, and these mushrooms (from Ontario, Canada), were not keeping well, even though we bought them yesterday, so into the stir-fry they went.

                  If you have a Roku device (standalone streamer or TV), the camera is currently on sale for about $40, though the cloud storage is $3.99 a month per camera. You probably don't need a Roku device just to view it on a smartphone, though. You do need a wifi network.

                  That's still a small fraction of what we paid to upgrade the cameras installed around the perimeter of the house and they don't cover all the possible views. I might be getting another Roku camera or two.

                  For a year or so we had a Cooper's Hawk patrolling our back yard, chasing birds and squirrels, and possibly rabbits. Based on feathers and fur I've seen in the yard, I think he was doing OK. I haven't seen him up close lately, but I think I saw him in a neighbor's tree last fall. He did crash into some of our window a couple of times, and spent about a half hour sitting on the balcony railing driving the birds and squirrels crazy once.

                  Last night I saw another fox on the deck and a couple of raccoons standing on the back patio waiting for the fox to leave. I was expecting some kind of confrontation, but I think the fox slipped past them.

                  I know the foxes have caught a few rabbits, we've heard them squealing several times. I don't know if the vixen had a litter this year (last year we had a pair of them), I haven't seen any younger foxes yet but they may not be ready to be escorted around by their parents yet.

                    Navlys, I agree with BakerAunt. I have some Penzey's spices I've had for quite a few years and I find that their spices last much better than the ones from the supermarket. The only time I toss them is if they have clumped together because of moisture. I buy the bags as well.

                    I made stuffed portobello mushrooms for dinner tonight and I have leftovers for a few days. They are stuffed with chopped mushrooms, shallots and spinach with melted cheese - very filling. I had quartered Campari tomatoes (on sales) with Penzey's lemon pepper for my "side."

                      I just put in a Roku outdoor wireless camera on our deck so we can watch the birds during the day and the animals at night.

                      Here are my initial thoughts on it.

                      The base unit on the one I initially ordered wouldn't sync up with my network, after a lengthy chat with Roku tech support, they agreed it was DOA and it was returned (through Amazon.)

                      The second one came yesterday (5/3) and the sync process worked fine, though it did take several tries before it successfully logged into my home wifi network. I have the camera on my back deck so we can watch the birds and animals out there.

                      It says it is 1080P but the image is slightly grainy or blurry on a 24 inch monitor, though that's not noticeable on an iPhone. It works well enough that I can see the fox currently on the deck, eating peanuts and we can identify most of the birds. (Grackles, robins and bluejays, mostly.)

                      A few other things I've noted:

                      When I play it on my Roku 56" TV, I get video but the sound doesn't come through. (That may be because we're not using the tiny built-in speakers but feed the audio signal into our stereo system.) Standalone Roku devices all seem to work fine.

                      Also, when I try to watch the video using the Roku website on my laptop, it can't connect to the camera.

                      Roku says the cordless unit will work for up to 90 days on a charge, but the app tells me the battery is at 61% after about 6 hours. The deck is on the north side of the house, I don't know if adding a solar panel would help much, it doesn't get a lot of direct sunlight.

                      Another thing worth noting: The Roku app is apparently not available on an Apple TV. I have not tried accessing it from a Mac laptop or a Linux system yet.

                        We repeated the ham sandwiches (so good on the Whole Wheat Maple Buttermilk Bread!) and microwaved frozen lima beans.

                          I baked that oil-based peanut butter oatmeal cookie recipe again on Wednesday. As I have done before, I reduced the oil to 2/3 cup because I use crunchy, natural peanut butter. I also used up the rest of a bag of peanut butter and milk chocolate chips. However, I remember last time thinking that they were not oaty enough, so I added an additional ½ cup of old-fashioned oats. That did make it a bit difficult to incorporate the cup of chips. I ended up kneading them in with my hands at the end. I used a #30 scoop to put nine on each cookie sheet. I used wet fingers to press the dough down before baking. Scott and I both like the taste and texture, so I will add the extra half cup of oats whenever I bake the recipe again.

                          With the extra oats, I am firmly in the camp of Joan and Chocomouse that oats in cookies make them health food, especially when I use white whole wheat flour. (King Arthur is now calling it "golden" wheat as a re-brand, since too many people assumed that it was the same as AP.)

                            Tonight I made a crustless quiche with the asparagus I had planned for Easter (I wasn't feeling up to par for a few days over the weekend) which I kept in water in the fridge this week. This morning before work, I roasted the asparagus with some red onion to save a step when I get home. I'm very pleased with the simple recipe I found. It was as good tonight with the asparagus as the first time I made it as directed with spinach and mushrooms.

                              I tried a suggestion I read on Reddit (r/pizza) and I buttered one side of the dough after it was rolled out, then I put a parchment round on it, flipped it over onto the peel and loaded it with toppings. It slid off the peel into the oven easily without any flour or corn meal as lubrication.

                              After 5 minutes, I pulled the parchment out (in a 475 oven it would probably not have burst into flames but might have singed.)

                              Made for a crisper crust on the bottom, which was the goal.

                              Limited the toppings to sauce, some diced red pepper, some pepperoni, green olives, mozzarella, cream cheese and a sprinkling of romano cheese.

                                  Navlys--I like leftover roasted asparagus in frittatas. (Can you tell that my husband is not a fan of asparagus?)

                                  We finished the dressing and had more leftover turkey and gravy with microwaved frozen mixed vegetables, picked up today at the local grocery run.
