So we had steaks, mushrooms, baked potato and some pastry cream mixed with bananas, with graham cracker crumbs on top.
I also filled 10 eclairs and glazed 7 of them with chocolate ganache.

On Sunday, I made yogurt. For dinner, I roasted sweet potato chunks, which we had with salmon coated with a glaze of Dijon mustard, maple syrup, and olive oil, then sprinkled with a mixture of pecan meal, Panko, and olive oil. Scott also made nice large salads for us. Later that evening, I mixed up a Four-Bean Salad to take to Scott's cousins' reunion this week.
Yesterday bbq ribs with potato salad I made the day before.
Tonight a cheese enchilada, refried beans, lettuce, tomato and sour cream.
I hope each of you had a great Mother's Day , I've been busy and on the go with family and friends. Saturday was my friend that's family's birthday so we celebrated her with a low country boil it was perfect ... her daughter had everything planned out, then Sunday we had leftovers from the day before.. Today I had leftovers from the fridge clean out and cleaning day. Everyday is a blessing to me!
Tonight we had salads with tuna fish.
One of the last aunts from my husbands side died this weekend so I had to go to a funeral and stand in the rain so it's a pimento cheese sandwich for me.Not complaining about the rain we still need it, slow drizzle all day- the good stuff!

Sorry to hear about your loss Joan. This is a nice rain and a good one for a pimento cheese sandwich. I had leftover chicken sausage, green beans and lemon potatoes

As I continue to work my way through my freezer, I came across a couple of links of Italian sausage from June, '24. So I had Italian sausage and pasta the last two nights. Tonight I am having a hamburger, oven baked fries, green beans and carrots.

I had a tomato sandwich , celery and pimento cheese sticks and blueberries.
I made a taco salad with ground chicken instead of beef. I found a Tex-mex salad dressing where I substituted Greek yogurt for the sour cream and it was nice and light - I used a salad mix, some red onion, tomatoes and avocados with grated cheddar and crushed Fritos - I have leftovers!
I pulled a duck out from the freezer the other day and today I disjointed it and cooked it on the BBQ. Had it with noodles and cauliflower and carrots.
I'm planning to do another round of pizzas tonight and tomorrow.
