Well wishes for you, Mike. Hope you get to feeling better soon. I had Stromboli salad. Never made it before so I think it turned out pretty good.

February 9, 2025 at 6:44 pm #45500No Super Bowl here - Mike, I hope your cold is mild too. When I had mine in January, the Teladoc told me to use Flonase, Afrin Sinus and good old Vicks. I used the Vicks each night and I think that helped keep it out of my chest.
Joan, your Stromboli looks good.
I made an orzo spinach one pan dinner from an NYT recipe. I made a couple of changes per the comments, but I also used Penzey's herbs instead of fresh and goat cheese instead of feta. I'll make this again. But I had planned to bake chicken tenders, but by the time I'd done the prep work on the orzo, it was going to be too late to cook the chicken, too. So, I had a cup of butternut squash soup to go with my pasta. I'll cook the chicken tomorrow.

I came down with something in January, shortly after New Years. I was at my neighbors on New Years Eve and you know there was all that hugging and stuff. After about a week I tested myself, but the test came up negative. But still, I had a sore throat for several weeks.
Joan, that Stromboli looks professional! I've never made one, but it's been in the back of my mind.
Tonight I had pasta with meat sauce and fresh green beans (same thing I had yesterday).
I watched the Super Bowl. Only two of the commercials were amusing to me (to be fair, I don't pay attention to most commercials), the mayonnaise commercial which was a parody of the restaurant scene from When Harry Met Sally, well done but not original, and then the baby Clydesdale in the Budweiser commercial.

February 10, 2025 at 7:50 pm #45515I roasted and processed two pie pumpkins on Monday. I froze some of the puree and plan to use the rest in upcoming cooking and baking.
For Monday's dinner, I made pecan-coated pork chops, a new technique for me. I worked off a recipe for Sheet Pan Pecan Crusted Pork Chops with Balsamic Veggies, which I find on the internet at a site called Simply Sissom. I just did six boneless pork chops, which I dipped in an egg combined with Β½ Tbs. Dijon mustard, black pepper, and roasted paprika. I held back on the paprika out of concern for my husband, but next time, I would use more, and I think he would be fine. I overcooked the six by about 5 minutes. I thought them slightly dry, but my husband did not mind, and the coating protected them. I will adjust the time to 20 minutes at 350 F next time. I roasted sweet potato chunks in the small oven to go with them, and we also had microwaved fresh broccoli.

I baked my chicken tenders tonight, but I probably cooked them 2 minutes too long - I hate when I do that.

Tonight I had steak and salad.Still happy with the air fryer it cooked my steak in 7 minutes medium rare at 400*
Thanks for the comments on the Stromboli.I only had salami, and pepperoni and cheese so I doubled the layer of salami.Chocomouse the liver and onions sounds so good and especially that salad.
I watched the Super Bowl, happy with the Eagles and agree with Len on the commercials.Makes me wanna watch When Harry Met Sally again π

For dinner, I cooked half a box of wholegrain rotini pasta, which I mixed with a 4 oz. log of Greek cheese and a 12 oz. bag of cooked frozen spinach, with a dash of lemon and freshly ground pepper. Next time, I would use just half a bag of spinach, as it overwhelmed the rest of the ingredients. We had it with two of the leftover pork chops from last night.
