Sorry about your refrigerator Mike.Today I had rotisserie chicken and coleslaw.
So tonight we finished off the chicken marsala.
It's been 3 or so years since this fridge was worked on, and it is, after all, almost 28 years old. And replacements aren't going to fit in the same space, SZ's current models are about 6 inches higher. There was another maker (Frigidaire, I think) making one that fit in the same space as two SZ's side-by-sides, but when we looked at this two years ago there was something like a 6 month backorder list. I'll probably call the appliance store this week, just to see what they say.
Sunday is our last night here. I made chicken salad with the remaining chicken from the bone-in breasts I roasted last week. I used chopped celery, mayonnaise, and some of Penzey's Justice blend seasoning, as we like it on the roasted chicken. We ate the chicken salad as open-faced sandwiches with cherry tomatoes on the side.
We plan to visit a special person on the way home. More on that later.
Our dinner was bibambap, served on glass noodles. There is enough leftover for my lunch today.
We're having pork chops for supper.
I had a hotdog and slaw .
I took a chicken thigh out of the freezer, chopped up some veggies, opened a box of unsalted chicken broth and made chicken veg soup. Had it with a burger.
Len your supper looked good!
I had a sausage sandwich with a banana and a slice of pound cake.
We had pork chops and a broccoli-cheese-pasta dish.
I had leftover turkey noodle soup, Diane had bean with bacon soup.
I had a steak and corn on the cob.
I took a piece of rotisserie chicken out of the freezer and warmed it up in pasta sauce with broccoli and roasted some small red potatoes.
We had cheese souffle tonight, gotta use up eggs.
I had a sausage and egg sandwich with a banana.
