DESCRIPTION
Mama's Ice Box Fruitcake. This is so easy and really doesn't taste much like a baked fruitcake --- and to me is better. Enjoy!
SUMMARY
Yield 0 File under cakes, Fruit, ice box
INGREDIENTS
1 lb Crushed Vanilla Wafers or Graham Crackers
1 lb Raisins
1 lb Candied Fruit Mix
1 Quart Pecans
1 Can Sweetened Condensed Milk
1 lb Marshmallows*
1 Stick Butter
1/2 lb Candied Cherries
OPTIONAL- You can add a cap full of Rum flavoring or the real thing. Mama never put the Rum or flavoring in hers.
INSTRUCTIONS
Melt marshmallows and butter in double boiler. Add milk. Mix dry ingredients together. Combine dry ingredients, marshmallow-butter-milk mixture, candied fruits and nuts.
This mixture gets pretty thick and is easier to mix by hand. Combine thoroughly and place in mold. Pack tight because you don't want any air bubbles. Refrigerate overnight.
* Marshmallow Creme could probably be used in place of the marshmallows AND butter, then nothing would have to be heated.
