Taffy Apple Cookies

Taffy Apple Cookies
1 cup butter
2/3 cup sugar
1 large egg, beaten
1 tsp. vanilla extract
2 1/2 cups flour
1/2 tsp. baking powder
18 oz. caramels
1/4 cup water
2 tblsp. evaporated milk
ground nuts
powdered sugar
Cream butter and sugar. Blend in eggs and vanilla. Mix flour and baking powder in a separate bowl, add flour mixture to creamed mixture.
Preheat oven to 350°.
Shape into 1-inch balls and place on ungreased cookie sheets. Bake for 10-12 minutes or until golden brown. Remove from oven and insert a round toothpick deep into each cookie. Cool completely.
In the top of a double boiler, melt caramels with water and evaporated milk. Stir constantly. Dip cookies into caramel and then roll in ground nuts. Dip bottoms in powdered sugar to prevent sticking. Place each cookie in a tiny cupcake paper liner.
