Dinner on Sunday was pan-cooked pork, by my husband, and roasted sweet potato chunks, by me. We also had coleslaw.
We had a stir fry of leftover veggies on glass noodles, with a side of roasted brussels sprouts.
We had tacos.
We had leftover pork and coleslaw, along with potato chunks that I tossed in olive oil and roasted.
I had leftover chicken stir fry and will probably have the rest of it tomorrow night, as I am leaving Wednesday for a week in Ohio and Michigan. My husband had a tooth pulled late this afternoon, so he had ice cream with chocolate sauce!
We had mozzarella cheese crust pizzas again, our pizza urgings are being sated.
Last night I made two batches of coq au vin, same recipe (Child's) but with two different wines, to take to the wines class at UNL today.
Our dinner tonight was meatloaf, baked potato, and roasted brussels sprouts.
We had left over coq au vin for supper, but what I really wanted was a big hunk of bread to soak up the sauce!
I made stir-fry for dinner on Tuesday, using the leftover pork, celery, carrots, mushrooms, red bell pepper, de-glazing from the pork, and soba noodles.
I had a BBQ sandwich and cheese and crackers.
I made a Smithfield pre seasoned pork loin roast. I roasted it with potatoes and carrots. It came out pretty good.
We had pork tenderloin topped with blueberry preserves mixed with blueberry -cinnamon hot sauce. Why not? I baked it at 350 for 20 minutes. Yummy last night and yummy cold for lunch today!
Chili from the freezer and a hot dog.
