Granddad Brown's Fried Chicken

INSTRUCTIONS
1 chicken cut into serving pieces
1 cup flour
salt and pepper
Crisco
Put the flour in a paper bag and season it with salt and pepper to taste. Melt the Crisco in a skillet so that you have about a quarter inch of fat.
Rinse the pieces of chicken and pat them dry. Shake in the seasoned flour. Place in the hot fat over a hot flame. Brown on all sides. Turn the heat to low and cover the skillet. Cook, turning frequently until the chicken is tender. During the last ten minutes, uncover the skillet so the chicken gets nice and crisp. This will take about an hour.
The skin gets all nice and crisp. It is wonderful! This will not work with skinless chicken. It is even good cold, although it is not as crisp. This brings back so many memories of childhood - I can smell the chicken frying for Sunday dinner at Granddad's house...
