I had 2 hot dogs and pumpkin pie earlier.
I also baked 2 more pie pumpkins and have them ground in the processor and now in the fridge.
I made cauliflower soup from a cauliflower in the garden, and we picked up arepas at a pumpkin festival.
On Sunday, I made Quinoa salad with lima beans and corn as my contribution to dinner at the first night of my husband's cousins' family reunion. They had a vegan chili as the main dish, but my husband cannot eat the beans or the spices, so I made the salad so that he would have something nutritious that he could eat. I served the goat cheese on the side, so that people could add it if they wished,
I just put a big pan of lasagna in the oven - we'll have leftovers in the freezer for a few weeks.
No cooking for me tonight I'm having a big Caesar salad.
Mmmm, lasagna sounds good, I haven't made one for at least a year.
I had a BBQ pork sandwich and stewed squash.
Dinner tonight was roasted chicken thighs, squash, and wild rice.
We had tuna melts using an Italian Heirloom tomato from the garden. Yummy!
My neighbor brought over some figs from her fig tree. They needed to be used pronto. I found a recipe for pork tenderloin with figs and onions. It was a "Simply" online recipe. Dinner was impressive and delicious.
This week is even busier. I made boneless pork roast with baked squash and cheesy mashed potatoes. I also made a rotisserie chicken in the air fryer with corn and cornbread. There is also a roasted boneless turkey breast for lunch sandwiches.
We're having BLT's tonight.
Leftovers for me -- chicken thigh, bean salad, and a serving of the cavitappi-veggie salad I made for my husband to take to a potluck.
Just yogurt for me tonight.I went thrifting with my friend and we had a big breakfast for lunch.I found 2 pull over tops and a pair of hey Dude shoes like new all for $25.00.
