      INSTRUCTIONS

      My fav scone recipe yet – i like cakey, rich scones!

      3 cups bleaches ap flour ( no bleached flour at my place, I subtracted 2 tbsp. flour and added 2 tbsp. starch)
      1 tbsp. baking powder
      5 tbsp. chilled butter, cut into 12 pieces
      ¼ tsp. salt ( that’s my variation, I think they’re sweeter)
      ¼ c sugar ( I used ½ c), white or brown
      ¾ c milk, buttermilk, cream or sour cream (I found that you need 1c if using sour cream)
      2 eggs

      preheat oven to 425°, line baking sheet w/ parchment

      I made them in a food processor: put flour, sugar, leavening and salt into bowl, mix a couple seconds to combine, add butter in pieces and pulse until mixture resembles coarse meal. Beat eggs & milk together, add to flour mix and pulse only until a soft, shaggy dough forms. Don’t overwork.
      Turn onto lightly floured surface and knead a couple times to make a rather smooth dough. Divide in half and pat each part as a circle on the sheet.
      Cut each circle in sixth but don’t separate the pieces.
      Brush w/ either egg wash or milk or cream and sprinkle w/ coarse sugar, if desired.
      Bake about 15 min. until well colored but not too brown. Cool on racks.

      I love them!
