Rhubarb Cobbler
3 cups rhubarb
2 cups sugar
1 Tbsp. butter or margarine
1 egg
1/2 cup shortening
1 cup flour
1/2 cup milk
1 tsp. baking powder
Cut rhubarb into small pieces and place in 7 x 12" pan. Cover with 1 cup sugar and dot with 1 Tbsp. butter or margarine.
Cream shortening & 1 cup sugar, add egg and mix well. Combine flour and baking powder & add alternately with milk to batter. Stir to mix all ingredients. Pour over rhubarb and bake 50-55 minutes at 350F degrees.
