I made Milk Street's almond cake for Wine Club! I shared a piece with my neighbor who absolutely loved it. She asked for the recipe and when I told her it called for almond flour and 3 eggs, 3 egg whites and a scale she no longer seemed interested.

Thanks BA for that heartfelt story. It is definitely inspiring. Hope NPR can continue to thrive!

Funny thing is my rosemary used to come back in the spring. Last year and this year it did not. In fact last year my rosemary did not do well at all. We'll have to see how it does this year!

Thanks for your positive words vis a vis the expiration on spices. Spices do lose their punch over time but maybe not enough to make a big difference.
Last night I made FC"s pork tenderloin with a maple hoisin glaze. It was a bit of work getting all the ingredients together but it was well worth it!

BA I know how much you like Penzey's as do I. I bought 2 of those $50 gift cards for $70. I just received my latest order. Most of the expiration dates were 2026 or 2027. The jar of roasted garlic powder expires October of this year. Never one to let anything go I called Penzey's and explained my dilemma . After I was put on hold for a short time I was told that that was an acceptable date and that their spices can actually still be good after 10 years. I was trying to picture tasting that spice after 10 years! Not a happy camper!

I had a chuck roast in the freezer which I defrosted over several days. I pulled out my slow cooker and threw it in with the kitchen sink. I opened my pantry and away I went. I cooked it on low for several hours tipping the cover occasionally to slow down the process. It was the tenderest roast I have ever experienced using a slow cooker. It even tasted good! I served it over mashed potatoes.

I had to use up my jar of roasted red peppers so I made a variation on romanesco sauce using up some toasted almonds and cashews. I didn't have any tomato paste in my larder so I used some sundried tomatoes in oil. I served it over sliced chicken breasts. In retrospect it needed something....maybe lemon juice. Not too bad though!

We had roasted chicken with fruit salad and asparagus. The asparagus was on sale but I had to buy a big bunch which is too much for 2 people -one of which is not a big fan of asparagus. Also most of the stalks are super skinny but not all which makes for uneven roasting. I had to eat most of it and will have more today!

We were supposed to go to my neighbors for Easter Dinner but her husband who has MS wasn't doing well. So we had pork tenderloin with a balsamic glaze and fruit salad with a honey dressing which was going to be my contribution to the dinner.

I decided since I'm tired of spending lots of time in the kitchen making dinner from some new recipe that we could have hot dogs and beans, (my husband loves baked beans). Anyway I started searching for the healthiest hot dogs. I never realized how much saturated fat, sodium, sugar and carbs were in hot dogs. Ugh. I almost gave up on the idea. None of our nearby supermarkets carry the applegate all beef franks which is said to be one of the healthier ones. To end this saga...I found Dietz and Watson all beef uncured franks at our supermarket and they seem healthier than most Hot dogs it will be!.

Just an fyi. The savory madeleines looked better than they tasted. The banana bread came out perfect. Now I remember why I purchased the madeleine pan. There was this recipe for chocolate madeleines in the "JOY OF CHOCOLATE" cookbook. The madeleines attach together with chocolate frosting and look like an oyster shell. I tasted one at a friends house and they were delicious.
Next month the theme is "Austria". I have a spaetzle grater that I never used. Maybe I should rethink using it.

Today I'm baking savory madelines for our French themed wine club event. Of course I have never made them before. The reviews on line are positive but who knows if those are from influencers. I already have two of the pans so I may as well use them. I'm also baking banana bread before the flies start circling my bananas. Big baking day for me!
