There are a few conversions you just have to memorize, one is that a pound is 453.5 grams.
That's about 1.4 pounds of grain/flour, so I doubt it will make 2 full-sized loaves, much less three of them. A standard 'one pound' loaf pan was named that because it accommodated dough made with one pound of flour.
Flax seed behaves like a seed in dough, flax meal behaves more like egg, or so I'm told. Not sure if that's enough to have much impact, but it sure won't increase the dough volume by enough to make 2 full-sized loaves.

Earlier I got another batch of carrot vinegar started, it'll be percolating for the next 2-3 weeks. I strained this one more than the last one, I think the sediment was part of the reason it went bad so soon. I'll probably strain it at least once more while it vinegarizes and at the end, too.

I haven't been to either of the Sams Clubs in town to see if they have the whole-milk mozzarella in stock, the website sort of implies they do, because I can order it for pickup.
Both futures prices and spot market prices for wheat are near multi-year highs, which suggests there will be flour price increases at some point, though the major flour producers probably already have their wheat supplies and prices locked in for the next several months if not longer.
I've been seeing flour prices going up at the grocery store, like nearly all other foodstuffs.
There may be some channel issues and some diminished product availability, but will we see the shortages we saw in early 2020? My guess is probably not, that was due to a combination of panic buying or hoarding and people who weren't baking before the pandemic hit buying flour and trying their hand at baking. I don't know how many of them kept at it, I know my son did it for a while but has backed off a lot since then, in large part because he's changed jobs twice since the pandemic hit.

My seeds order is here, so I'm just waiting until the middle of March to start them growing inside.
The Aerogarden seems to be producing less pickable lettuce, and some of it is threatening to bolt, at which point it turns bitter. It is about 14 weeks old and that's probably a reasonable time frame for lettuce grown indoors under the thin-and-return method. The spinach didn't last very long, I think I got 2-3 decent pickings from it. The parsley is still sending up new stems, I've been picking it and taking it over to one of my wife's colleagues, I've got enough dried parsley from the first few pickings to last me a long time and they like to eat it fresh.
I may go ahead and rip one side out in the next week or so and get it ready to replant, then do the other one a few weeks later, so that I've got two sets of crops in slightly different parts of their cycle.
I made a batch of 7 dozen banana nut mini-muffins today. Most will go in the freezer, but they're so good that first day.

What they don't eat are corn and soy meals.
The Sams Club member website still shows the 5 pound bag of whole milk mozzarella as being available, it does not show the jars of artichoke hearts.
