Zesty Zucchini Squares
4 1/2 cups grated zucchini
1 1/2 cups Bisquick
1/2-1 cup grated Romano cheese
1/2 cup oil
6 large eggs, slightly beaten
1/2 cup finely chopped onion
2 Tbsp. chopped fresh parsley
1 cup finely chopped pepperoniMix all ingredients well. Lightly grease 9 x 13 inch pan. Place into pan. Bake 35-40 min. at 350 degrees. Let set for 10 min. before cutting into small squares.
