We had leftover roasted chicken breast for dinner on Wednesday. I made noodles and mushrooms to go with it. I sauteed the mushrooms in avocado oil and added some dried sage. I cooked a mixture of white and spinach noodles in chicken broth from the freezer, then added it to the mushroom mixture.
October 31, 2024 at 8:19 am #44504We made a big batch of deviled eggs last night, most of them to go in to my wife's office for a pot-luck lunch.)
October 31, 2024 at 6:31 pm #44507We ate the rest of the roasted chicken breast tonight, along with more of the noodles and mushrooms.
October 31, 2024 at 8:31 pm #44508We had some deviled eggs, some potato-leek soup, I had some salad, and we had some Ossi di Morte cookies.
Happy Halloween!
November 1, 2024 at 12:55 pm #44516I agree with BakerAunt that plate looks great Len. Tonight I'm having a sandwich. I've had my niece that's more like a sister to me all week and we've had a great time. I have kept up with ya'll but just haven't posted.Every thing is back to normal now.
November 1, 2024 at 6:44 pm #44522I had one last zucchini from the farmers' market a few weeks back, and I used it to make Turkey-Zucchini Loaf with Peach-Dijon glaze for Friday night's dinner. I used some peach jam that I canned in the summer. We had it with the last of the noodles and mushrooms and the last slice of the Mostly Whole Wheat Maple Buttermilk Bread (pumpkin shape), which we split.
November 1, 2024 at 8:22 pm #44525We had keto-friendly creamed tuna on biscuits. The biscuits were made with CarbQuik, they were OK but the keto-friendly biscuits I made a few months ago were better. I made them using some cream, next time I might try using butter. I also used Carbalose for the roux in the creamed tuna, it didn't get quite as thick as flour does, but it tasted like creamed tuna (though it needed more salt, probably not enough chicken bouillon.)
November 2, 2024 at 1:21 am #44526Tonight I made pizza, sausage, pepperoni, red bell pepper and mushrooms.
Thanks for the compliment, Joan and BA. I've always felt that you taste food with your eyes before it gets into your mouth so it should look good.
November 2, 2024 at 8:51 am #44528We had burgers that we grilled and froze a few weeks ago. Definitely juicier and tastier using 80% ground beef.
November 2, 2024 at 12:27 pm #44530Welsh rarebit tonight.
November 2, 2024 at 1:01 pm #44531I'm planning steaks tonight.
November 2, 2024 at 4:04 pm #44533I had a chuckeye steak and a baked potato with sautéed onions and peppers and it was great.

I made yogurt on Saturday. I also roasted some cubed potatoes tossed in olive oil to go with leftover turkey-zucchini loaf and microwaved frozen lima beans.
November 2, 2024 at 8:06 pm #44541We had our steaks (filet for Diane, NY strip for me), plus a small baked potato (< 4 ounces), sauteed mushrooms and the last small pieces of apple pie.
