I had black bean chili made in the crockpot yesterday. It was so cold that the crockpot was put on low at midnight, it wasn't yet boiling at 7:30 am. I put a thick towel on top for extra insulation and it was boiling three hours later.
The recipe was tasty but a little too mild. I think I've found a use for the jar of Harissa sauce in the refrigerator.
I made our favorite quinoa salad (Ensalada de Quinoa—on Bob’s Red Mill site with a few personal adaptations) this afternoon. We will have it at dinner with a rotisserie chicken.
I cooked cubed pork,thickened potatoes and green butter beans.
Chicken parm with pasta, broccoli and carrot.
Left overs here tonight soup and pimento cheese sandwich.
Leftover stir fry is on the menu at my house.
I roasted a chicken using a vertical roasting rack (think about beer can chicken). Also made roasted potatoes and an apple stuffed acorn squash.
Leftovers at my house, too! Pasta with meat sauce, risotto with mushrooms and asparagus, roasted squash, carrots, potato and onion, and a green salad.
We're having spaghetti and meat sauce with garlic toast.
We're having leftover rotisserie chicken and quinoa salad.
Leftover chicken and potato with fresh Brussels sprouts and a baked apple.
