General Tso spicy chicken dinner by Healthy Choice. I also made refrigerator pickles for the weekend.

We had leftover pasta and cheese, mine with asparagus, and my husband's plain. He had some microwaved fresh broccoli. We split the last pecan-crusted boneless pork chop.

I made chicken vegetable soup and had it with leftover pork tenderloin.

I made some refrigerator pickles yesterday so good and easy.
7-cups sliced cucumbers thin(I peeled mine)
1-large onion sliced thin
1-bell pepper sliced thin in long strips
Mix all together and sprinkle 1 tablespoon of salt place in colander and let drain 1-hour
In small pot heat
2 cups sugar (I did a little less)
1-cup brown vinegar I used white
1-tsp celery seed
1-tsp mustard seed ( I didn't have any and they are very good without.)
Bring to a boil and pour over cucumbers cool and refrigerate,so good they're ready to eat in no time and keeps very well for several weeks.May 22, 2025 at 3:05 pm #46379Those chopped salads in the supermarket make a great base on which to create a meal. I add a protein like chicken or steak, noodles and add -ins not included with packaged salad. Yum!

May 23, 2025 at 7:56 pm #46387On Wednesday, I started craving fried chicken tenders, but was too lazy to go to any of the places that have really good ones. So I bought a bag of Perdue frozen breaded tenders and I've been cooking a couple each night in my toaster oven. I made a honey mustard sauce and have a box of mixed greens. It has been a simple, easy dinner especially after crazy busy days at work.

May 23, 2025 at 9:56 pm #46389We had yet another cool day. That is three nights with a fire in the woodstove for a while to warm the house enough for overnight. We had some of the soup I made earlier in the week for dinner.
May 24, 2025 at 7:19 pm #46393Nice day today, in the 70's, so we did NY strip steak on grill, with portobello mushrooms and baked potatoes. Sunday/Monday forecasts call for lower temperature with high chances of rain.
May 24, 2025 at 7:46 pm #46394I made yogurt on Saturday. My husband cooked pan-cooked some pork, and I roasted sweet potato chunks and microwaved fresh broccoli to go with it. My older bonus son arrived last night and will be visiting for about two weeks, so I expect to be cooking and baking more than usual.
We are still having cold nights. It was in the 40s last night and will be again overnight. We are probably having our last fire in the wood stove until next fall.
