I'm glad to hear that you are doing ok, Mike.
I made coleslaw on Sunday, using an organic green cabbage from Kroger, a red cabbage from yesterday's farmers market, and some grated carrots. It's a big coleslaw, so we will be eating it most of this week, which is fine, as it only gets better. We will have some for dinner tonight, along with leftover roasted chicken thighs and the remaining bit of the stir-fry.

I found some purple potatoes at the farmers market last Saturday and roasted them as chunks tossed in olive oil for dinner tonight. We also had the last two roasted chicken thighs, more of the coleslaw, and some applesauce. The purple potatoes have a slightly sweet taste.

July 15, 2025 at 9:58 pm #46764It was hot and muggy on Tuesday, so much so that we are leaving the air conditioner on tonight and the windows closed. For dinner, we had leftover coleslaw and warmed up the remaining roasted purple potatoes. Scott pan-cooked pork for dinner. Dessert was a small loaf of pumpkin bread from the freezer. We have not had such a long period of summer heat with no rain that I can recall since we lived here.
July 16, 2025 at 4:32 pm #46765It's so hot and muggy here too BakerAunt , we've had rain but no way our air is going to be cutoff probably till November, don't even think about it .I know my electric bill is gonna be sky high but I'll be cool.
I had to go to Walmart today so I picked up rotisserie chicken and Amish potato salad so that was my supper tonight. Delicious.
July 16, 2025 at 7:07 pm #46766It's been hot and humid here, also. We have a heat pump and three mini-splits. I run the one in the bedroom all night every night, and the others only if I will be in that specific room. However, we have an "open concept" kitchen, dining room, living room, sunroom, so only one mini-split for all four. I never use it when I am baking/cooking. I also try to do most of my cooking on the grill on the deck.
July 16, 2025 at 8:06 pm #46767I made stir-fry for dinner on Wednesday using soba noodles and last night's leftover pork and deglazing from the pan. I used a mix of vegetables: carrots, celery, green onion, red and yellow bell pepper, mushrooms, a small zucchini, broccoli, and some bok choy. We had some rain in the early evening, which we very much needed, so it has cooled off a bit. We might be able to open windows tonight.

July 17, 2025 at 12:27 pm #46769There's a food truck in town yesterday and today that is from Cousin's Maine Lobsters, doing lobster rolls. This is a business that was featured on Shark Tank in around 2012 and has grown to around 100 trucks since then. This truck was from the Kansas City area.
They're trying to interest someone in becoming a local franchisee. Based on the line at lunch yesterday, there may be a market here.
We tried that for lunch yesterday and may have them again for supper tonight.
A bit pricey ($24) but there was quite a bit of lobster meat on each one. (One customer was bemoaning the small size of the lobster roll, calling it a ripoff, but I've had lobster rolls in Maine and this was reasonable for the amount of meat, size and price, especially considering that the lobster meat has to be shipped in.)
We had what they call a 'Maine lobster roll', served cold with mayonnaise. They also offer a Connecticut lobster roll, warm with butter, and a garlic butter lobster roll for some strange reason. (I think lobster and garlic are a terrible combination, the garlic drowns out the taste of the lobster, reminding me of the scene about apricots and honey in the movie 'Notting Hill'.)
We might try the warm one tonight.
They also have lobster quesadillas and some other options, and both lobster bisque and clam chowder. (I tried the clam chowder, it was good but not spectacular.)
Service once you got your order placed was reasonable, about 5 minutes.
July 17, 2025 at 1:02 pm #46770Mike my friend went to the same name food truck here last weekend and she said it was worth waiting in the heat for it. I'm having chicken salad, boiled eggs and sliced tomatoes for a cold plate tonight. I made the chicken salad with one of the rotisserie chicken breasts and added minced celery with mayonnaise and honey.

I got a rotisserie chicken so I could have dinner tonight. My leftover spinach and tomatoes were still good so I had a salad with the chicken. I think their chicken is a little dry compared to HarrisTeeter, so I'll make chicken salad tomorrow.
