I roasted a salmon filet in a cast iron skillet, had it with mashed potato and asparagus. Have enough left for tomorrows lunch.
December 23, 2021 at 7:41 am #32481I thought of you, Joan, when I was making the turnip greens soup. I was going to make the greens and the turnips separately, but my husband was uncertain about eating something he had never eaten before, so I made the soup just for me. Turnips and turnip greens are a super health food, so I am going to incorporate them into my diet when I find turnips and greens as nice as those I found last week.

December 23, 2021 at 9:48 pm #32498I'm making a batch of pastry cream for a trifle, I think I'll make a triple batch (starting with 6 cups of milk) so there's some left over. π
December 23, 2021 at 10:35 pm #32501I had chicken stock and turkey stock in the freezer and I boiled some chicken to make more stock so I have my dressing made and it's in the fridge ready when I bake it.
I made a double recipe of banana pudding so the only baking I did today was brown the meringue.

December 24, 2021 at 1:10 pm #32504Except for the ham and the potatoes, we are ready to serve dinner at 6:00 this evening. We've been reduced from 14 to 7 people due to illness and employment. We just changed our plans for Christmas Day dinner with my sister and her husband due to the weather forecast; we have a severe weather advisory due to a prediction of ice over half an inch thick on the roads. Instead, we'll join them for dinner on Sunday.
December 24, 2021 at 2:57 pm #32506Dinner will be at 6 tonight here, too. Chili with cinnamon rolls and oyster stew. Dessert is trifle or cherry pie, what we don't eat tonight becomes the dessert tomorrow.
My wife wound up using essentially the entire triple batch of pastry cream in her trifle, it looks fabulous. It's a good thing we had a package of ladyfingers in the freezer, because I didn't see it in either of the stores we usually use.

December 24, 2021 at 6:14 pm #32510We had dinner shortly after 6 p.m. tonight as well: leftover coleslaw and ham sandwiches on the pumpernickel bread I baked yesterday. I found an unopened jar of Bavarian hot mustard in the cupboard, and it went so well with the mayonnaise, bread, and ham.
December 25, 2021 at 3:03 pm #32523On Wednesday I got a beautiful tied pork loin roast from Whole Foods. So that was dinner and lunch for several days.
December 25, 2021 at 7:14 pm #32525Christmas dinner was roast chicken, gravy, Pepperidge Farm blue bag dressing, applesauce from the freezer, and microwaved fresh broccoli. Dessert was pumpkin pie.

Last night was ham sandwich and fries ,I baked a ham and turkey breast yesterday and I used the ginger ale it was good and juicy.Mike had talked of this before.
Today we had Turkey breast,ham,dressing ,cranberry sauce,greens from the freezer,macaroni and cheese,sweet potato casserole with marshmallow topping,rolls and pumpkin pie.Lots of leftovers for the rest of the week.
