      I think we're going to save the rest of the pizza for Monday when Diane needs a quick meal because she's got some PT scheduled for 7PM, so tonight is looking more like tuna salad night. I'd prefer tacos, but will probably get outvoted by Diane and the cat. πŸ™‚

        For Sunday dinner, I made Maple Glazed Pork Tenderloin, as well as muddled steamed potatoes. I decided that instead of boiling the cut-up potatoes, I would cook them in the metal steamer basket. It worked well and was easier than watching a boiling pot to make sure it did not go dry. The taste of the potatoes was superior as well, so I will make them this way in the future. For a vegetable, we microwaved frozen green peas.

          I made sheet pan fajitas tonight with an avocado sauce (leftover avocado, chopped tomatoes, lemon juice, s&p and some garlic powder) it was too loose to be considered guacamole, but it worked. We still had some of Will's whole wheat tortillas in the freezer. It was a nice dinner.

            I had a hotdog and chips at my friends today.We were riding the country roads on the golf cart and saw several gopher tortoises and I got a picture of several.This one had some of the biggest ticks on his hind legs I had ever seen and I got some paper towels and pulled them off and smashed them in the road, maybe he or she will sleep better tonight.I love seeing these ❀️

              In some states (FL) it is illegal to even touch a gopher tortoise.

                  Mike it's illegal to touch one in Georgia too but I did.I didn't pick him up but pressed on the shell to pull the ticks off.My friends husband worked for a road construction company and he said many times if they saw a gopher hole they had to work around it .Rattlesnakes use their hole too .My husband and friends and family hunted rattlesnakes in the wintertime they would syphon gas down the holes and the rattler would come out .I went one time that was enough for me ,I don't like snakes of any kind.

                        After we returned from taking the bonus kid to the airport, we had leftover maple glazed pork tenderloin, the rest of the muddled mashed potatoes, and microwaved frozen mixed vegetables.

                          I had my brother over on Sunday and made pork tenderloin and hot dogs on the BBQ. A salad and mashed potatoes rounded it out. A Whole Foods cherry pie for dessert. Yesterday I had a leftover hot dog, salad and Whole Foods potato salad. Tonight will be leftover pork and mashed potato and a salad. Easy meal for a hot day.

                                I think we're having tomato and salami sandwiches tonight.

                                I'm probably making a small batch of tomato sauce, too, maybe half the size of the one I did over the weekend. Not looking like I'm going to get a huge tomato crop, mostly smaller varieties. Time to switch varieties for 2025.

                                  I made yogurt on Tuesday.

                                  I also made a Greek Pasta Salad, working off of a recipe from Olive/Tomato. I used whole grain penne for the pasta and added green onion, cucumber, red bell pepper, cherry tomatoes from our garden, and black olives. We had it with leftover maple glazed pork tenderloin. It is far too hot today to turn on an oven.
