          Like Joan, we went for leftovers: the rest of the salmon patties on a bun, red coleslaw, and microwaved fresh broccoli.

            This morning I roasted zucchini and then two boneless chicken breasts to eat this week.

            Two friends came over late today to help me get a box out of the attic, so I treated them to take out from a local Mexican restaurant. I can use my leftover rice with my chicken and zucchini.

              I decided to wait until this morning to make the relish, because by the time I got my bread and cookies done, I would have been up to 2AM waiting for the relish to get done enough to refrigerate.

              I wound up with about 6 1/2 pounds of tomatoes, so it's about a 2/3 batch.

                I had an open package of mozzarella and a little pasta sauce that I wanted to use up, so I made a pizza and a simple salad with it.

                    We had sandwiches on the Banh Mi rolls I made yesterday. The paper bag in breadbox idea seemed to work, the bread was a bit softer than last night but not as soft as they would have been in a plastic bag and not drying out, either. Still one hot dog bun left. I'll see what it is like tomorrow.

                    5 minutes in the oven and they were just about as good as last night.

                      For dinner on Monday, I made Turkey-Zucchini Loaf with Peach-Dijon Glaze, using the rest of the zucchini that I grated yesterday, as well as some peach jam left over from when I canned a batch. I also made Green Beans, Cherry Tomato, and Feta Salad to go with it.

                      I'll add a picture tomorrow.

                        Tonight I reheated the chicken skewers with pan fried okra, sliced tomatoes and leftover macaroni salad.

                          We reheated two slices of the Turkey-Zucchini meatloaf, which we had with the rest of the green beans, cherry tomato, and feta salad.

                            We had grilled chicken thighs, corn on the cob, baby beets, and a combo of steamed zucchini and yellow summer squash. I stole a few grape tomatoes off the vine to snack on while the chicken cooked.

                                  I had eye appointment today and met my friend after , we shopped half the day so I had a healthy Choice sweet and sour chicken dinner.I splurged and had a chocolate ice cream cone after. .....It was worth it πŸ™‚
