BakerAunt, I hope that was a fun trip for you and that you had a nice break from your usual days in the kitchen!
I made a big pot of corn chowder today, so we have some leftovers for the freezer.
It's in the 40's here, with heavy winds and not-quite snow.
So we had something warm, chili and cinnamon rolls.
I had Popeyes chicken, to go with it I made pasta with a veggie sauce (carrot, celery, onion, mushroom, garlic and a little sauce from a jar).
We had baked chicken,macaroni and cheese and garden pea salad.
Last night I made a lemon asparagus pasta. I threw in a can of tuna. This will be good for a few more nights. Tonight Iâm going to throw in some cherry tomatoes.
For dinner on Friday night, I tossed sweet potato chunks in olive oil and roasted at 375F for 45 minutes. We had them with leftover rotisserie chicken and microwaved frozen peas.
We had Chinese takeout from the same place we got it from last Friday.
We went out for dinner, first time in over two years of the pandemic. We had baked haddock with crabmeat stuffing -- excellent!
Yesterday I had leftover fried chicken and I made rice and broccoli.
Today I made a pot of hamburger vegetable soup with grilled cheese sandwich on this cold and windy day.
Leftovers tonight
Leftovers here, too! If we swapped, would they still be called leftovers?
I made clam chowder for lunch on Saturday, with enough to last into the next week I replaced 1/2 cup of the 2 cups of 1% milk with some half and half that I had left over from another use.
For dinner on Saturday, I made our old staple, Salmon, and Couscous with Greek Seasoning. We also had microwaved fresh broccoli.
For Saturday's dinner, I made a pizza.
