      I needed a second item for the after church social time, and since my husband insisted we do some packing last night, I had to do something quickly this morning. I googled mini-muffins on the KAF website and two recipes came up. (Alas, none came up here at Nebraska kitchen. I know that I could do regular muffins as minis, but I didn't have the time to experiment with baking time, etc.) The first was not quick, but the second, "Salted Caramel Cookie Bites," had potential if I omitted the salted caramel and nuts. The recipe came together very quickly, and I have festive Christmas mini-muffin papers. I baked them for 8 minutes, then pulled them out and sprinkled them with a little red and green sugar, before returning them to the oven for about 3 1/2 minutes. The recipe called for letting them sit in the pan for 15 minutes, but since I was not using the topping, I took them out at once. They taste fine without the caramel topping, which I think would have made them too sweet, and one person in the reviews said that the caramel made the paper stick to them, so I will probably never use it. They have a butterscotch/butter rum flavor, thanks to the light brown sugar and a bit of butter rum flavoring. These would be nice for a cookie platter, or for a bake sale.

      Ironically, I did not end up putting them out for the social time, since someone else did not read the sign-up sheet and also brought cookies, so I did not put these out with my cake. My family will happily eat them.
