Yesterday, my husband and I drove to the National Bakery in Tarpon Springs. We always make a pilgrimage when we are in Florida. My husband bought a bag of his beloved kouloura. I bought a spinach pie turnover to have for lunch and a bag of ladokouloura, which is a ginger version of the ones my husband bought. I do not tasted ginger but primarily cinnamon, but it is a gentle cinnamon flavor. I like them, and I wondered if I might be able to bake them at home.
I googled various recipes. Most contain orange juice, but I do not taste orange juice at all. Brandy or cognac are included in most recipes. For spices, I've seen cinnamon, nutmeg, and allspice, but as I noted, cinnamon seems to be the primary flavor. The lady at the counter told us that they are made with olive oil, which is great for me.
I found a non-orange juice recipe that uses cinnamon water in addition to cinnamon that I might try:
I think that there are many different versions of this cookie, which reminds me of my quest, finally achieved, to find the perfect Pfeffernus cookie,
These cookies are more like small rolls, not as soft as rolls or crunchy like cookies.
If anyone knows of other recipes that might work, let me know.

Have you tried contacting National Bakery and asking them for their recipe? I was looking for a recipe for something I had at a bakery in Evanston and they sent it to me. So they might be willing to share.
December 6, 2024 at 11:04 am #44885Years ago when I was in Chicago, one of the employees in my department was Greek and would bring in her pastries every few weeks. (She was especially fond of making ones with gold or silver foil on them.)
Some of them she made several different ways, I suspect if you ask a dozen Greek bakers for recipes you'll get 20 different ones. π
December 6, 2024 at 1:11 pm #44886My daughter in law is Greek and when I was there last year they made Greek cookies but were shaped like a small log then baked and dipped in a honey or sugar syrup.I think this is the same cookie, I'll get her recipe for you BakerAunt.Does this look like it to you?

If you click on the link, you will see a picture of them. They have some sesame seed sprinkled on them, and they are like doughnuts with the ends joined to form the doughnut shape,
I suspect that Mike is correct: there are no doubt many versions of these cookies.
