Pumpkin Roll

This is a recipe that I received from my sister-in-law a number of years ago.
3 eggs
1 cup sugar
2/3 cup pumpkin
3/4 cup sifted flour
1 tsp. baking powder
1 tsp. lemon juice
1/2 tsp. nutmeg
2 tsp. cinnamon
1 tsp. ginger
Beat eggs on high speed for 3 minutes gradually adding sugar. Stir in lemon juice and pumpkin. Add other ingredients and mix well. Pour into 15" x 10" jelly roll pan that has been greased and floured well. Bake at 375 degrees F for 12-15 minutes. Turn out on to a hand towel sprinkled with powdered sugar and roll towel and cake up. Let cake cool 1 hour or longer. Then unroll and spread cake with filling.
Filling:
1 large package cream cheese, softened
1/2 stick margarine or butter
1 cup powdered sugar
1/2 Tbsp. vanilla
Mix ingredients well and spread like frosting on cake. Roll cake without the towel to form the pumpkin roll.
