Pineapple Zucchini Bread/Cake

This recipe comes from my friend Marianne and is more like cake than bread. It's so moist and delicious with the cream cheese frosting on it. I love the golden raisins, coconut and pineapple in it, too. I wouldn't make it without the cream cheese frosting though as it really makes it a winner. I made 4 loaves with some zucchini that I really needed to use up, frosted it, cut it lengthwise, and then sliced it. I gave most of it away because I couldn't stop eating it. I got rave reviews. 2 eggs
1/2 cups oil
1 cup sugar
1 cup shredded zucchini
1/2 cup golden raisins
1/2 cup chopped nuts
1 small can drained crushed pineapple
2 tsp. vanilla
1 1/2 cup flour
1/2 tsp. salt
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. baking powder
1 tsp. soda
1/2 cup coconut, optional, but I love it in there
Mix all ingredients above. Pour into greased and floured loaf pan. Bake at 325 degrees for 1 hour or until done. Frost with cream cheese frosting. Makes one loaf.
**I baked mine about 1 hour and 15 minutes, but I had 4 loaves in the oven at the same time.
